51 Lincoln — One–minute calamari

Craving calamari, but short on time? Frances Rivera is taking you to 51 Lincoln in Newton to sauté some squid in one–minute flat!

Makes enough for 4 people

INGREDIENTS
1 each sliced red and green jalapenos
1 half of a red onion julienne
4 cloves of slices garlic
8 sprigs of calamari tubes and tentacles (tubes should be cut in rings)
1/8–cup rice wine vinegar
1 vine ripe tomato seeded and julienne
Teaspoon of chopped ginger
6 large basil leaves
Handful of fried plantain chips (peel plantains and slice thin and deep fry in canola oil, then season with salt and pepper)

METHOD
Heat a large sauté pan and add 1/8–cup canola oil.
When the pan is almost to the smoke. point of the oil add onions, ginger, garlic and jalapenos.
Now. add calamari and sauté for one minute tossing ingredients often.
Then, turn off heat and add all the other ingredients tossing then evenly.
Serve with plantain chips.
